Sauvignon Blanc is vinified in large Georgian earthenware qvevri. The dry white is classified as Vin de France and carries 13.7 percent alcohol. The estate’s vines grow on clay and flint over Blois chalk, on south- and southeast-facing slopes above the Beuvron. Harvest is by hand, no oenological inputs are used during vinification, and any sulphite addition at bottling is very small.
