Bright citrus zest and creamy vanilla lead the aroma, joined by honey and a clear coastal salinity. The palate is smooth and lively, deepening into ripe fruit, toasted grain and fresh spice. A subtle seaweed and smoke note gives the sweetness definition without dominating. The finish is long, clean and lightly salted. Serve neat, with a few drops of water, or alongside seared scallops.
