AboutViñadores de Gredos
Rubén Díaz began tending his mother’s small vineyard in Cebreros in the late 1990s, before making wine at home and borrowing cellar space and barrels. His first commercial bottlings came in 2004; in 2016, he joined Joaquín Ruano to establish Viñadores de Gredos.
The project works about twelve hectares of small mountain parcels around Cebreros and San Bartolomé de Pinares, on granite and schist soils. Garnacha grows alongside old-vine Albillo Real and Chasselas, with farming that follows organic practices. Grapes are harvested by hand and fermented in small lots with their own yeasts.

An oxidative, Oloroso-like nose brings toasted nuts, warm spice and apple compote. The palate is dry and textural, with pear, dates and candied-nut richness cut by vibrant acidity. Savoury rather than fruity in the conventional sense, it stays fresh and distinctive, finishing with a gently earthy, sherry-like tang and persistent nutty detail.
