Winemakers Brendan and Laura Carter created Unico Zelo in South Australia, choosing grape varieties with the region’s warm, dry conditions in mind. Nero d’Avola and Fiano appeal to them for their flavour as well as their ability to cope with heat and drought. They work with fruit from across South Australia, including the Riverland, aiming for fresh, aromatic wines with minimal additions where the fruit allows.

Fresh A.F. brings together Nero d’Avola and a lift of Zibibbo from Barmera in South Australia’s Riverland. Juicy red fruit and bright aromatics meet a refreshing line of acidity, while the region’s sandy limestone soils lend a dry, savoury edge. Serve it lightly chilled with pizza, grilled sausages, tomato-based pasta or charred vegetables.
