Tofino Distillery makes organic spirits on Vancouver Island’s west coast, surrounded by temperate rainforest. It works with organic grain from British Columbia, organic botanicals, and water from the Meares Island watershed reservoir. The range runs from vodka and gin to liqueurs, absinthe and whisky, with a tasting room at the distillery.

Clean and precise, with a neutral grain character and a smooth, lightly rounded texture. Organic winter wheat gives the palate a quiet cereal softness, while pristine coastal water keeps the profile clear and composed. The finish is dry, polished and restrained, making this a versatile choice rather than an overtly flavoured vodka. Serve thoroughly chilled, over ice, or in a dry Martini; it also provides a clean base for citrus-led and savoury cocktails without crowding their other ingredients.

Anise leads with a bold, sweet herbal character, supported by fennel, wormwood, hyssop and lemon balm. Certified-organic botanicals give the palate a broad, aromatic shape, with cooling licorice, fresh herbs and a soft floral edge carrying into a persistent finish. The texture is generous and designed to open with dilution. For a traditional serve, add chilled water slowly over a sugar cube and allow the spirit to louche; it also brings concentrated botanical depth to absinthe-led cocktails.
