Lees ageing brings gentle richness and complexity, while the absence of malolactic fermentation preserves a crisp, focused line. A touch of toast returns on the medium-bodied finish. Serve moderately chilled with roast chicken, grilled halibut, crab cakes or creamy vegetable dishes.
