AboutPascal Doquet
Pascal Doquet has worked as a Champagne winegrower since 1982, first in the family estate and then, from 2004, under his own name with his wife Laure. Their son Noé joined in 2017 as the fourth generation. Based in Vertus, the estate covers 8.69 hectares split between the southern Côte des Blancs and the chalky Coteaux Vitryats.
Doquet stopped using herbicides in 2001, and the first fully certified-organic harvest followed in 2010. Chardonnay accounts for almost all the plantings, and grapes from different sites are made into wine separately. Native yeasts are used for fermentation, including the second fermentation since 2016, and some of the wines mature in wood.
