Subtle fruit and steamed-rice aromas open into a clean, savoury palate with restrained apple and citrus-peel notes. Fine rice umami gives the middle gentle breadth, but the expression remains precise and distinctly dry. The finish is brisk, lightly textured and refreshing, leaving very little sweetness behind. Serve chilled, at room temperature or gently warmed with sashimi, grilled white fish, tempura, yakitori or simple rice dishes.
