AboutMitobe Sake Brewery

Mitobe Sake Brewery was founded in 1898 in Tendo, Yamagata, and makes the Yamagata Masamune range. It began growing Yamadanishiki rice in 2004 and now cultivates Dewasansan and Kame-no-o, while also buying Omachi and Yamadanishiki from other regions.

Since 2010, all its sake has been junmai, brewed without adding distilled alcohol. The brewery uses mineral-rich spring water from the Ōu Mountains and a traditional fune press. A 2015 renovation added temperature-controlled storage and a cedar-lined koji room.

Yamagata Masamune Junmai Ginjo Usunigori Sake 720 mL

Japanese Sake
$73.99

Tropical fruit and lychee rise from the glass, followed by a soft, elegant palate with gentle sweetness and bright acidity. A fine veil of rice lees gives this lightly cloudy sake a supple texture without sacrificing its clean, dry finish. Serve chilled with tempura, grilled meats or fuller-flavoured mushroom dishes.
