The palate moves through vanilla, spiced apple and roasted almond, with white pepper bringing lift and definition. Ripe canned peach, dried conifer and malted grain open an unusual, distinctly local profile, with a soft confectionery note adding richness. Made entirely from British Columbia pale malt and matured for three years in a recoopered Okanagan wine barrel, the palate brings salted butter, honey, dried orange peel and rum raisin. Dark chocolate and rolling tobacco add depth toward the finish, balanced by a final biscuity sweetness. The texture remains full but composed. Enjoy neat or with a few drops of water.
