Barrel fermentation and light lees stirring bring measured texture, while the absence of malolactic fermentation preserves precision and energy on the long finish.

Green apple, pear and lemon peel lead into chalk, crushed stone and a subtle smoky note. The palate is bone dry and tightly focused, with fine bubbles, citrus drive and a cool saline edge. Hints of almond, dried mango and preserved ginger add quiet complexity without softening the precise finish. An excellent aperitif, and a natural match for oysters, sashimi, grilled prawns or roast chicken.
