Chicago couple Robert Birnecker and Sonat Birnecker Hart founded KOVAL Distillery in 2008. Robert brought a third-generation Austrian distilling background, while Sonat left an academic career to build and lead the business with him.
KOVAL handles every stage from milling and mashing to distilling, ageing and bottling on site, sourcing grain from Midwestern farms. Its whiskeys use the heart of the distillation run and mature in new Minnesota oak barrels.

Banana and light candy open with biscuit, confectioner's sugar and vanilla frosting. The palate is round and mouth-coating, bringing pie crust, cinnamon and dried fig into balance with cereal grain and measured oak. The sweetness remains controlled rather than heavy. The finish is warming and compact, leaving maple, faint oak, baking spice and a clean grain note.
