AboutKojima Sohonten

Kojima Sohonten was founded in Yonezawa in 1597 by Yazaemon Kojima, beginning as a sake shop that also brewed its own sake. Each generation has inherited the name Yazaemon, and the brewery later became a purveyor to the Uesugi family. It has occupied the same site since at least the middle of the Edo period.

Rice from contracted local growers and snowmelt-fed water from the headwaters of the Mogami River are part of its brewing tradition. Cold winter temperatures support slow fermentation, with the brewers relying on sensory judgment and skilled handwork. The former brewery became the Toko Sake Museum in 1984, preserving its traditional building and brewing tools.

Toko Karakuchi Junmai Daiginjo

Japanese Sake
$81.99

Young melon and fresh cucumber give the aroma a cool, understated fruit character. The palate is exceptionally clear and precise, with a fine mineral firmness, restrained rice flavour and a light savoury undertone. Its dry profile remains smooth rather than austere, moving cleanly into a crisp, sharply defined finish. Serve well chilled with langoustine, sashimi, grilled mackerel, smoked eel, tempura or simply seasoned white fish.

Soft rice aromas introduce a mild, rounded palate with gentle savoury depth.
