Young melon and fresh cucumber give the aroma a cool, understated fruit character. The palate is exceptionally clear and precise, with a fine mineral firmness, restrained rice flavour and a light savoury undertone. Its dry profile remains smooth rather than austere, moving cleanly into a crisp, sharply defined finish. Serve well chilled with langoustine, sashimi, grilled mackerel, smoked eel, tempura or simply seasoned white fish.
