AboutJosé Luis Carrera
José Luis Carrera makes Paranubes in the river canyons below Río Tuerto, in Oaxaca’s Sierra Mazateca. He learned to make aguardiente de caña, a sugarcane spirit, from his father and grandfather and has practised the craft for decades.
For Paranubes, sugarcane from Carrera’s farm is grown without pesticide or fertilizer, pressed fresh and fermented with wild yeasts. The spirit is distilled to bottling strength without additives.
Paranubes Oaxaca Aguardiente de Caña Rum
Mexican Rum
Fresh sugarcane, mint and apricot lead the nose, with green banana and a faintly briny edge adding complexity. The palate is silky but vivid, balancing pure cane sweetness with grassy flavours, lemongrass, almond and savoury spice. Fresh-pressed cane juice is wild fermented in Oaxaca's Sierra Mazateca, preserving an earthy, highly expressive character rather than a polished neutral profile. The finish is long, green and gently saline. Serve neat, over ice or in a sharply balanced Daiquiri.
