Holyrood Distillery opened in 2019 in central Edinburgh. It was founded by Canadians Rob and Kelly Carpenter with Scottish distiller David Robertson.
The distillers experiment with heritage and speciality malts and different yeast strains, exploring their effect on fermentation and flavour. Rather than build a permanent core whisky range, Holyrood issues limited single-malt releases that are intended to differ from one another.

Dried and tropical fruit lead the nose, with raisins, butterscotch, fresh cake, sticky toffee and a soft leather note. The palate is generous but balanced, layering caramel, vanilla, digestive biscuit and tablet over ginger spice and a light savoury salinity. Maturation in Oloroso and Pedro Ximénez casks, bourbon barrels and rum barriques gives the whisky both richness and lift. The finish is long and mouth-watering, carrying apple pie, red fruit and sweet spice. Serve neat or add water gradually.
