Dixeebe Espadín Edition No. 3 Mezcal
Ripe stone fruit and green herbs open the nose, with a tangy yoghurt note adding lift. The palate is buttery and supple, combining baked agave, clove and cacao with restrained sweetness and a fresh herbal line. Smoke remains subdued, allowing the fruit and cooked-agave character to stay clear through the middle. Made in Santiago Matatlán by Valentín and Asís Cortés, it finishes smooth, earthy and gently smoky. Serve neat in a copita, with water alongside.
Dixeebe Tobalá Edition 3 Joven Mezcal
Sweet florals and fresh citrus open the nose, followed by orange peel and a light thread of smoke. The palate is expressive and balanced, with tropical fruit, papaya and mint layered over cooked agave sweetness. Earth, mineral and herbal tones give the fruit a savoury counterpoint, while peppercorn spice adds definition without harshness. The finish is long and gently smoky, carrying citrus, herbs and ripe agave. Serve neat in a copita and allow it time to open.
