Dillon’s Small Batch Distillers opened in 2012 in the Niagara wine region, placing a working distillery among Ontario’s vineyards and fruit farms. Founded by Geoff Dillon, it works with nearby growers for fruit, botanicals and grain.
Inside, copper pot stills sit alongside custom equipment, including a purpose-built mashing and stripping still. The range spans gin, rye whisky and vodka; gin-based ready-to-drink cocktails followed in 2022, with vodka cocktails added later.

Cold-brew coffee gives the aroma a deep roasted character, with dark cocoa and caramel-like notes emerging as it opens. Vodka keeps the palate clean, while coffee liqueur adds richness and a measured sweetness. The texture is smooth and full without feeling syrupy, finishing on lingering espresso and gentle bitterness. Chill thoroughly, shake well, and pour into a coupe or small cocktail glass for a fuller texture.

Ontario rye gives this vodka a clean grain character and a little more presence than a completely neutral style. Distillation through oak smooths the edges, leaving a refined, composed palate with subtle rye warmth and a clear finish. The texture is rounded without feeling heavy, making it versatile enough for simple serves while retaining character in mixed drinks. Serve well chilled, lengthen with soda and citrus, or use in a Martini where its grain-led structure can remain apparent.
