AboutDario Princic

Dario Princic established his winery in Oslavia in 1993 after years of selling the family’s grapes to other cellars. The small family estate farms about ten hectares near Gorizia and the Slovenian border, on steep, southeast-facing slopes of clay and sandstone worked by hand.

The grapes ferment with their skins in open oak vats using naturally occurring yeasts, with the time on skins adjusted to each variety. The wines age in old wooden barrels, then settle naturally in steel tanks before being bottled unfiltered.

Dario Princic 2017 Sivi Pinot Grigio

Italian White
$104.99
Dark pink-amber in the glass, with apricot skin, mandarin peel, candied ginger and ripe tropical fruit. The palate is full-bodied and energetic, combining bright acidity with fine skin tannin, stony minerality and a gently bitter savoury edge. Long and persistent, it pairs well with roast pork, mushrooms or aged cheese.
