Burnaby’s Dageraad and New Westminster’s Steel & Oak brought their Belgian, German and North American brewing influences together for a pair of imperial stouts. During pandemic isolation, the brewers devised a shared base recipe, then made a version at each brewery. Dageraad’s rendition used cacao nibs and miso, while Steel & Oak released the companion beer.

Deep cacao and roasted malt lead, followed by dark chocolate, blackcurrant and a savoury layer from miso. Oats and rye build a rich, smooth texture, while peppery warmth gives the finish structure without eclipsing the cocoa. Generous and contemplative, it suits slow sipping alongside braised beef, blue cheese, chocolate tart, roasted mushrooms or other deeply flavoured dishes.
