Corte Pavone is the Loacker family’s estate in Montalcino, purchased in 1996 with just four hectares of vineyards. Hayo Loacker leads its work with organically and biodynamically farmed Sangiovese.
The estate combines soil analysis with infrared measurements of chlorophyll and foliage to map differences across its vineyards. This work guides seven vineyard selections, known as the dynamic crus, whose precise parcels can be adjusted with each season’s readings.

Italian Red
Dark fruit, blackcurrant and spice lead an earthy, mineral-driven profile, with cherries and black tea adding depth. The palate is elegant and tightly wound, framed by chalky, savoury tannins and bright berry fruit. Long and composed through the finish, it is an excellent match for roast lamb, game or porcini.
