Ciavolich 2023 Cerasuolo d’Abruzzo
Montepulciano from young vines in Loreto Aprutino is harvested by hand and left with its skins for about eight hours. The must is then vinified as a white wine and fermented at controlled temperature in stainless steel, where it remains until bottling in January or February. Pink reflections accompany light fruit and floral notes. The palate is fresh, fruity and savoury. The vineyard has clay-calcareous soil at 250 metres.
Ciavolich 2015 Aries Pecorino
Made entirely from Pecorino, the fruit comes from vineyards in Pianella and Loreto Aprutino. The grapes are hand-picked in the first hours of daylight and carried to the winery in small baskets. After soft pressing, the must ferments at controlled temperature in stainless steel. A small portion spends three months in French tonneaux before blending and bottling, followed by about two months in bottle.
