AboutChoshu Sake Brewery
Choshu Sake Brewery in Kikugawa, Yamaguchi, continues the local tradition of Kodama Brewery, founded in 1871. After about fifteen years without brewing, the business was acquired by Choshu Sangyo, which set out to revive it. A new brewery was completed in December 2019, and sake production resumed in 2020.
The brewery still makes its long-standing Nagato Kikugawa label alongside Tenbi, created for the new beginning. Tenbi takes one character from Amaterasu, the sun deity associated with nurturing rice, and another from Biroku, an old name for sake.
Tenbi Tokubetsu Junmai Hiire
Fresh white grape and golden kiwi lead the aroma, joined by ripe melon, apple and a light floral note. The palate is smooth and gently sweet, with layered umami and a subtle natural spritz that gives lift. Vibrant acidity keeps the fruit precise, while a faint savoury edge carries into a dry, invigorating finish. Serve well chilled with tempura, fried chicken, dim sum, grilled fish or lightly seasoned vegetable dishes.
Tenbi Junmai Ginjo Hiire 720 mL
Fresh white grape, lemon and lychee give the aroma a bright, gently floral lift. The palate is soft and juicy, balancing delicate sweetness with transparent acidity, light umami and a fine citrus edge. A subtle mineral and malt note adds grip before a clean, lightly dry finish. Serve well chilled with sushi, steamed shellfish, grilled chicken, tofu, vegetable tempura or softly seasoned dishes that will not overwhelm its freshness.
