AboutChampagne Chavost
Twenty growers in Chavot-Courcourt founded the cooperative behind Champagne Chavost in 1946. Its vineyards around the village grow Chardonnay and Meunier on chalky limestone and richer clay-limestone soils.
Cellar master Fabian Daviaux arrived in 2019 and developed a separate range from a small organically farmed holding. For these wines, fermentations start spontaneously, with no added sulphites, dosage, fining or filtration. They sit alongside the cooperative’s conventionally made Champagnes.

French Sparkling
Green apple, ripe pear and citrus zest lead, followed by red fruit, almond and a quiet brioche note. The palate is dry yet generous, with creamy texture, firm vinous structure and fine, persistent bubbles. Mineral freshness keeps the wine balanced, while a softly savoury, buttery nuance carries the long, composed finish.
