Champagne Ayala
AboutChampagne Ayala
Edmond de Ayala founded the house at Aÿ in 1860. In 1865, he offered a style made with far less added sugar than was then usual in France. The Bollinger family acquired Ayala in 2005, and a new winery followed in 2007.
Chardonnay leads the current range, with 120 small stainless-steel vats keeping wines from different crus, varieties and harvests separate before blending. The house works with fruit from its own vineyards and nearly a hundred grower families.
Champagne Ayala NV Brut Majeur
French Sparkling
Citrus, white flowers and white-fleshed fruit lead an expressive, finely detailed nose. The palate is fresh and balanced, with refined bubbles, clean fruit and a precise line from start to finish. Extended lees ageing adds quiet vinosity without compromising lift. A polished aperitif, it also works beautifully with shellfish, white fish, roast poultry or a cheese board.
Champagne Ayala 2015 Le Blanc de Blancs
French Sparkling
White fruit and acacia honey lead a fresh, lively palate, with subtle pastry and brioche adding quiet richness. Fine bubbles and a silky texture carry grapefruit and blood orange toward a long, persistent finish, where chalky minerality and delicate salinity keep the wine precise. Serve as an aperitif or with ceviche, prawn risotto or rosemary-braised veal.
