Third-generation mezcal maker Celestino Sernas López makes Veneno Mágico in Santiago Matatlán, Oaxaca. For this mezcal, mature agaves are harvested by hand, then the hearts are cooked in a conical stone oven and crushed by a mule-drawn stone wheel.
Fermentation uses native yeasts and seasonal rainwater, followed by two distillations in copper stills. The spent fermentation material and charcoal are returned to the soil.

Roasted agave and gentle campfire smoke lead the aroma, lifted by wild herbs, citrus and a restrained floral note. The palate is rich and earthy, with the agave's natural sweetness giving balance to the smoke rather than being covered by it. Herbal tones and bright citrus keep the middle fresh, while a subtle savoury depth adds structure. The finish is smooth and measured, leaving roasted agave, soft smoke and lingering herbs. Serve neat at room temperature, ideally in a small copita.
