AboutCastello della Sala

Castello della Sala surrounds a medieval fortress built in 1350 near Ficulle, close to Orvieto in Umbria. The Antinori family bought the property in 1940, developing an estate best known for white wines. Grechetto, Procanico and Chardonnay grow in clay and limestone-rich soils scattered with fossil shells.

Renzo Cotarella arrived in 1979, leading the experiments that produced the first vintage of Cervaro della Sala in 1985. Today, a modern winemaking cellar works alongside the sixteenth-century rooms beneath the castle.

Golden apple, lemon and white flowers lead, with chamomile, vanilla and lightly toasted oak adding warmth. The palate is structured yet fresh, balancing rounded fruit with clean acidity and a mineral finish. Its poised, savoury character suits grilled fish, roast chicken, mushroom risotto or creamy vegetable dishes.
