AboutCanadian Mist Distillery
Canadian Mist Distillery in Collingwood, Ontario, made the Collingwood whisky introduced in 2011. That whisky used Canadian grain and Georgian Bay water, with triple distillation, white-oak maturation and a final rest with toasted maplewood.
Distiller Harold Ferguson’s 1991 experiment with fully malted rye yielded fifty barrels for a later Collingwood release. His successor, David Dobbin, selected the whisky after twenty-one years in oak; it was married with toasted maplewood and released as a one-off in 2013.
Collingwood 21 Year Old Canadian Rye Whisky
Canadian Whisky
Dark rye bread opens with herbs, spring flowers and freshly turned earth. The palate is sweet and full, bringing hot white pepper, liquorice and creamy milk chocolate into balance with a pithy bitterness and quiet root-beer spice. Maple-cask influence adds gentle warmth. The finish is persistent and savoury, leaving rye, pepper, herbs and dark chocolate.
