Pale straw gold with a very fine bead. Almond, white peach, lime and grapefruit lead the nose, followed by redcurrant, raspberry and sour cherry, then a touch of pineapple as it opens. The palate is lively and low-dosage, combining citrus, toasted bread and ripe orchard fruit with a broad, chalky texture. Saline freshness drives a clean, mouthwatering finish.

Copper-rose in colour, with fine bubbles and a vivid nose of redcurrant, sour cherry, wild strawberry and violet. A discreet lemon note brings lift. The palate is lively and chalky, capturing ripe red fruit without heaviness, then narrowing into a fresh, refined and gently saline finish. Excellent with sushi, cured ham or roast poultry.

Candied citrus, kiwi and fresh lemon lead a bright, focused bouquet, with white fruit, ginger and a gentle brioche note adding depth. Low dosage keeps the palate taut and precise, while fine bubbles and a chalky mineral line carry the flavours cleanly. Serve well chilled with oysters, sashimi or gougères.
Bruno Paillard 2002 Blanc de Blancs Champagne Magnum
Intense gold with green highlights and an exceptionally fine bead. The nose begins saline and iodine-edged, then opens to citrus, fresh almond and white flowers. The palate is taut yet opulent, layering candied citrus, marzipan, toast and buttery pastry over a mineral spine. The finish is very long, precise and energetic; serve at the start of a special meal.

Ripe citrus peel, green apple and pear meet gingerbread, toasted brioche, candied fruit and a gentle nutty note. The palate is ample and softly textured, yet a firm mineral line and lively acidity preserve clarity. Fine bubbles carry citrus and orchard fruit through a long, clean finish. Serve with roast scallops, aged Comté or poultry.
