Bodega San Isidro
AboutBodega San Isidro
Bodega San Isidro in Pueblo Nuevo, Ica, was producing pisco by 1919. Diego Loret de Mola and Carlos Ferreyros revived the distillery in 2002 and established BarSol. The BarSol name joins the Spanish words for bar and sun, a nod to taking pisco from Ica into bars abroad.
BarSol’s pisco starts with grapes from southern Ica and is distilled in traditional pot stills. It is distilled to bottle strength, without adding water or other ingredients after distillation. Varieties include aromatic Italia, Torontel and Moscatel, alongside the less aromatic Quebranta.
BarSol Pisco Mosto Verde Torontel
Peruvian Brandy
White and purple flowers lead an expressive nose, joined by citrus blossom and a gentle peppery herbal note. The palate is smooth and aromatic, with jasmine and magnolia carried by a richer texture than a fully fermented style. Made by distilling partially fermented Torontel grape must, it preserves the variety's floral lift while giving the spirit breadth and clarity. The finish is clean, fragrant and lightly spiced. Serve neat or use in a polished Pisco Sour or Chilcano.
