Three-cask maturation brings together baked orchard fruit, sultana and cocoa over a smooth, honeyed malt core. Sherry casks add dried-fruit richness, bourbon barrels contribute vanilla and rounded oak, and port casks deepen the fruit without making the palate heavy. Gentle spice builds toward a long, balanced finish with lingering raisin and dark chocolate notes. Enjoy neat, with a few drops of water, or beside nutty hard cheese.
