Straw-yellow colour with bright green hues accompanies pink grapefruit, lychee, sage and elderflower. The palate is supple and fresh, with lime and pineapple in the finish. Sauvignon Blanc and Sémillon are hand harvested, cooled before gentle pressing and fermented in stainless steel below sixteen degrees Celsius. The wine is then held at about ten degrees to prevent malolactic fermentation.

Tannins are extremely elegant, and the aftertaste is very persistent, with coffee, berry fruit and toasted oak. The blend includes Cabernet Sauvignon, Merlot and Cabernet Franc, with Petit Verdot used in a small amount. Barrel ageing lasts eighteen months.

Cabernet Sauvignon, Merlot and Cabernet Franc are joined by a small amount of Petit Verdot. Malolactic fermentation and eighteen months of ageing take place in small oak barrels. Bottle ageing lasts ten months.

The palate is full-bodied and concentrated, with Sangiovese bringing sour-cherry lift and fresh acidity to the Cabernet-led structure. Firm tannins remain composed through a long, savoury finish, with coffee and warm spice emerging in the glass. Decant carefully and serve with roast beef, lamb or aged Pecorino.
