Winemaker Alyssa Hubert established L-ST Projects in the South Okanagan in 2020. She works without a vineyard or permanent winery of her own, changing growers, varieties and production locations according to the British Columbia fruit available each vintage. Her still and sparkling wines ferment with naturally occurring yeasts and are bottled unfined and unfiltered, with additions kept to a minimum.

Canadian Sparkling
Crisp and textural, this traditional-method sparkling Pinot Blanc has a restrained, quietly distinctive profile. The palate is shaped by freshness and tactile detail, with its structure carrying through a poised finish. Its balance makes it especially useful at the table: serve well chilled with shellfish, delicate fish, fresh cheeses or vegetable-led dishes, or pour as an elegant aperitif.
