Poulsard must is combined with old destemmed marc that spent more than six years in oak. The finished Macvin then ages for more than thirty-six months. Serve cool, between six and eight degrees Celsius.

A second fermentation takes place in bottle, followed by at least twelve months on laths. Fine bubbles accompany white fruit, citrus and floral notes, with a lightly saline character and a taut finish.
