Italian White
Made from Erbaluce selected across estate vineyards, this white wine comes from pergola-trained vines on loose, stony moraine soils at about 320 metres, with south and south-westerly exposures. The grapes are destemmed and pressed, then fermented at low temperature for twenty-one days. Four months in stainless steel follow. Hawthorn and fruit accompany a straw-yellow colour with green highlights and a lively acidic structure.

Erbaluce forms the wine. The crop is pressed in a vertical press, and fermentation takes place at twenty degrees Celsius in 1,600-litre acacia and oak vessels and in cement tanks, without added sulphites. Ten percent of the wine receives maceration for as long as one hundred days. Bottling takes place in September with a small sulphite addition below forty milligrams per litre.

Italian White
Golden colour accompanies ripe fruit, citrus, warm rock and a fresh profile with substantial structure. Erbaluce comes from old vines in the Macelio and Madonna vineyards. Whole bunches undergo four to five days of cryomaceration before spontaneous fermentation with native yeasts. The wine remains on fine lees with bâtonnage. The profile is deep, with extended ageing potential.
