Seventy percent Grenache Blanc is joined by equal fifteen-percent shares of Clairette and Viognier. The grapes receive gentle direct pneumatic pressing and the juice settles overnight at 10°C. Fermentation takes place in stainless steel at 16–18°C, without malolactic fermentation. The wine then rests on fine lees for six months with regular bâtonnage. Alcohol is 13.5 percent and residual sugar is 1 gram per litre.

South African White
Marsanne, Fernão Pires, Viura, Clairette Blanche, Roussanne, Grenache Blanc, Grenache Gris and Viognier come from across the Western Cape. Herbal and anise notes accompany quince, Sicilian lemon, pear, peach blossom and apricot. Moderate acidity keeps the wine fresh, while an oily texture and fynbos scent shape the 13.5% palate. The cuvée pays tribute to vine smugglers who worked around restrictions to make wines from the grapes they wanted.

The vines occupy a single islet of plots on a hilly limestone plateau covered with white Urgonian rocks. The site lies in the northwest of the appellation, on a high plateau overlooking the Rhône. Winemaking includes pneumatic pressing, static cold settling, four months on the lees and no malolactic fermentation. Roussanne is vinified and matured separately in barrel before final blending.

White flowers, nectarine, orange peel and honey appear in a velvety white. White-fruit flavours, salinity and freshness accompany a rich profile. The blend includes Clairette Blanche, Grenache Blanc, Roussanne, Viognier, Bourboulenc, Marsanne and Vermentino. Grapes are hand harvested, and the farming is organic. Most fermentation and ageing take place in concrete, with a smaller portion using 600-litre oak vessels.

Serve well chilled with grilled Mediterranean fish, shellfish, olives or fresh cheese.
