Rose petals, strawberries, apricot and anise appear in the aromatics. Ripe strawberry, tangerine and apricot are present on the palate, which is dry and delicate with a juicy mid-palate. Made entirely from Sangiovese grown at Airport Ranch Estates in Washington’s Yakima Valley, the wine contains nine percent alcohol. The grapes are destemmed, lightly crushed and immediately pressed before cool stainless-steel fermentation.

Golden in colour, the wine brings apple, pear, chamomile, honeysuckle, beeswax and meadow grass, with pineapple, baked apple, honeycomb and quince. The palate is concentrated and long, with freshness and tension. Chardonnay from Airport Ranch Estates in Yakima Valley was harvested by hand, pressed immediately and lightly cold settled. Fermentation took place in older French oak puncheons, followed by five months on lees with weekly stirring.

Dark blackberry and blueberry open with grilled meat, crushed olive, black licorice, camphor and pen ink. Full-bodied and deeply concentrated, the palate remains balanced by bright acidity and sweet, fine tannins. Cracked black pepper, pan drippings, orange essence and hand-rubbed sage add savoury complexity. The finish is exceptionally long and nuanced, lingering on saline mineral notes, spice and dark fruit.
