Vermouth de Chambéry

Bright copper colour accompanies stewed fruit, prune, walnut and herbal notes. Sichuan pepper, almond, citrus, pear and cinnamon sit with gingerbread, tobacco, oregano and hyssop above a subtle bitter base. The recipe uses thirty to forty spices and botanicals and carries sixteen percent alcohol. Serve it over ice as an aperitif or use it in a Negroni or Manhattan.
