Retsina Appellation by Tradition
Cambas Karavaki Retsina
Pale straw colour and citrus freshness meet the wine’s characteristic pine-resin and dried-herb notes. The palate is light to medium-bodied, crisp and vibrant, with green apple, lemon, lime and a gently savoury edge. The resinous character remains measured rather than heavy, leading to a clean, slightly saline finish. Serve well chilled with Greek mezze, grilled seafood, olives, feta or herb-led dishes.
Kechris 2023 Tear of the Pine Retsina
Assyrtiko grows in Macedonia on clay-loam soils at 270 to 320 metres, from vines twelve to seventeen years old. Fermentation takes place in oak with selected fresh pine resin, followed by six months on fine lees. The dry white wine has 6.5 grams per litre of total acidity, 13.5 percent alcohol and 2.8 grams per litre of residual sugar. Viticulture is sustainable.
