Beaujolais

White flowers, green apple and pear appear with citrus and a saline mineral finish. The Chardonnay comes from a 1.4-hectare parcel at Pizay, planted with vines ten to fifteen years old. Whole clusters receive a three-day cold maceration before pressing. Half the wine is vinified in concrete, while the remainder uses old barrels and sandstone jars. Production totalled around twelve thousand bottles.
