Xarel-lo is fermented with about ten percent Gewürztraminer skins. Wild-yeast fermentation takes place in stainless steel, with twice-daily punch-downs and one month of skin contact. The wine receives very little filtration and may show haze or sediment. Mandarin, pomelo, pear, white flowers, spice and pepper accompany a medium body, a sleek mid-palate and a lively finish. The release is classified Organic, Biodynamic, Vegan and Natural.

About Parés Baltà
Parés Baltà traces its Penedès roots to 1790, when the first vineyards were planted around the estate’s manor house. Joan and Josep Cusiné represent the family’s third generation at the winery. Winemakers María Elena Jiménez and Marta Casas brought scientific backgrounds and formal winemaking training to the cellar, developing its range and methods over more than two decades.
The estate’s five Penedès vineyard properties stretch from Mediterranean-influenced lowlands to higher ground, with varied soils and local grape varieties. According to the winery, organic certification dates to 2002 and biodynamic farming to 2012; sheep, beehives and plant-based preparations are part of its vineyard work. It makes still wines with minimal intervention alongside cava fermented in the bottle.
