A fine, persistent mousse accompanies lemon, baked green apple, flowers, light toasted nut, butter and grassy notes. Biscuit and green apple also appear, with fresh acidity and a tart finish. The wine is made entirely from Chardonnay; whole clusters are pressed before seven years on the lees. This traditional-method sparkling wine was disgorged in March following its extended lees ageing.
