Green fruit skins and small white flowers define the aromas. Lime leaf, gooseberry and guava shape the flavours. Whole clusters are pressed, and fermentation takes place in stainless steel and neutral barrel. Full malolactic fermentation occurs in neutral barrel. Fruit comes from Waters & Banks Vineyard in Summerland, where the farming is described as practicing organic and non-certified. The wine contains twelve and nine-tenths percent alcohol and 2.6 grams per litre of residual sugar.
