Delicate cherry and violet are joined by juniper, bay leaf and a soy-sauce spice note. The palate is cool and spare, with a subtle outline of oak, cocoa bean, freshness and firm tannins. Lots from different parcels are handled separately: some use whole clusters and others are destemmed. Overall whole-cluster use is twenty percent, and pressing follows about two weeks.
