Citrus peel and grapefruit lead into juicy starfruit, white peach and young pineapple. The palate is lively and concentrated, with fresh acidity giving shape to firm apricot-like fruit and a clear savoury umami core. Kamenoo rice contributes a lightly rustic grain character that adds interest beneath the polished fruit. The finish is brisk, dry and sharply defined. Serve well chilled with sashimi, grilled squid, salt-grilled fish, braised pork or pickled vegetables.
