Toffee, gingerbread and roasted almonds give the nose a generous, dessert-spiced character, joined by candy and warm Christmas spices. The palate is soft and rounded, with sherry-seasoned wood building a concentrated toffee-and-nut centre rather than simple sweetness. Orange brings brightness through the middle, keeping the richer notes in balance. The finish is long and steady, carrying caramelized nuts, candy and citrus. Enjoy neat after dinner or with a small splash of water to open the spice and fruit without losing the rounded texture.

About Seven Seals Innovation AG
Dolf Stockhausen started Seven Seals Innovation AG in Stans, Switzerland, in 2018. It specialises in finishing whisky, using a process that increases contact between the spirit and wood after conventional ageing. The method is designed to shorten that final stage while allowing the company to explore different wood finishes.
