Peppery sweetness opens the nose, followed by dark fruit, tobacco and a measured layer of caramel and vanilla. The palate is smooth and rounded, with butterscotch, honey and dried fruit carried by toasted oak and a gentle thread of spice. Double distillation from British Columbia-grown malted barley gives the whisky a clear grain-led core, while more than three years in former bourbon barrels add depth. The finish is long and warming, with toffee and dark chocolate lingering.
