Lemon peel, candy floss and cocoa open the nose, followed by vanilla and warm oak. The palate is full-bodied and intensely fruity, with pineapple, green apple, honey and citrus balanced by a light chilli note. Initial maturation in first-fill bourbon barrels and a finish in smaller American-oak quarter casks build concentration while preserving freshness. The finish is aromatic and satisfying, carrying fruit, peppery spice and oak. Serve neat first, then add a few drops of water to soften the cask strength.
