Light and softly textured, with fresh cherry and red berries opening over a clear mineral note. Dried flowers and a gentle earthy tone add mature detail, while bright acidity keeps the fruit lively and direct. Fine tannins carry the pale, graceful palate into an easy, savoury finish suited to roast poultry, charcuterie or mushroom dishes.

About Tawse
Moray Tawse founded his Niagara Escarpment winery in 2001. Organic farming is a focus across its estate and selected Niagara vineyards. Jessica Otting has led the cellar since 2020, following a minimal-intervention approach. The winery’s design brings together gravity flow, geothermal energy and a wetland biofilter.
