Subtle earthiness and delicate floral notes shape the aroma, leading into a soft, rounded palate with clear rice sweetness. Gentle acidity brings freshness and keeps the richer umami character in balance. The texture is calm and composed rather than heavy, with savoury depth unfolding gradually. A clean, lightly tangy finish leaves the floral and grain notes neatly aligned.
Sohomare Kimoto Junmai Daiginjo Sake
Herbal notes, clove and orange peel lead into stone fruit and a subtle earthy savouriness. The palate is silky and layered, balancing honeyed richness with roasted nuts, clean acidity and a measured thread of umami. Traditional kimoto brewing gives the texture depth without making it heavy. The finish is composed and persistent, leaving citrus, cream, mushroom and a gently dry, food-friendly close.
